roasted sweet potatoes
time: 40 minutes
servings: 6

• 3 sweet potatoes, peeled and cubed
• 1/4 cup olive oil
• salt and pepper

• preheat oven to 425°.
• line a large, rimmed baking sheet with aluminom foil.
• add sweet potatoes to the baking sheet in a single layer.
• drizzle olive oil over top and toss to coat. top with salt and pepper.
• bake for 30-35 minutes, stirring every 10 minutes.
